Ingredients

1 large sweet potato
2 tablespoons canola oil
salt and pepper
2 tablespoons butter
2 tablespoons flour
2 cups beef stock
1/4 cup shredded light mozzarella cheese
Preparation

Slice sweet potato into 1/4in thick french fry slices.
Toss with canola oil, sprinkle with salt and pepper.
Arrange in single layer on a cookie sheet.
Bake at 425F for 20-25 minutes.
Meanwhile, heat butter and flour over medium heat in a saucepan.
Add beef stock, whisk well, lower heat and cook for 10-15 minutes or until thickened (you can also use a can of pre-made gravy).
When sweet potato fries are done, arrange them on a plate, layer with cheese, and smother with gravy
