Yellow Split Pea Soup (Weight Watchers) - cooking recipe

Ingredients
    2 teaspoons olive oil
    1 onion, diced
    1 carrot, diced
    1 celery, diced
    2 garlic cloves, minced
    1 cup yellow split peas, picked over and rinsed and drained
    1/2 lb red potatoes, scrubbed and diced
    4 cups reduced-sodium chicken broth
    1/2 teaspoon dried oregano
    1/8 teaspoon black pepper
    1/4 lb slice of roasted turkey breast, diced
Preparation
    Heat oil in large saucepan over medium heat. Add onion, carrot, celery, and garlic.
    Cook, stirring until onion is softened, about 5 minutes.
    Add split peas, potato, broth, oregano, and pepper and bring to a boil.
    Reduce heat and simmer, covered, until split peas are very tender, about an hour.
    Stir in turkey and cook until heated through, about 5 minutes.
