Mediterranean Sausage - cooking recipe

Ingredients
    2 cups onions, sliced
    4 lbs chicken breasts
    1 tablespoon tomato paste
    2 tablespoons garlic, chopped
    2 teaspoons fennel seeds, ground in mortar
    2 teaspoons cumin, ground
    2 teaspoons coriander, ground
    1/2 teaspoon allspice, ground
    1 teaspoon turmeric, ground
    2 tablespoons paprika
    1/2 teaspoon cayenne
    2 teaspoons black pepper
    2 tablespoons kosher salt
    1 teaspoon sugar
    2 teaspoons lemon zest
    1 tablespoon lemon juice, fresh
    2 tablespoons olive oil
    2 tablespoons mint, fresh and chopped
    1/4 cup Italian parsley, chopped
Preparation
    Simmer onions in water to cover until translucent, 5-7 minutes. Cool under cold water and drain. Coarsely grind the onions with the chicken using a Kitchenaid or food processor.
    Add the remaining ingredients to the chicken and blend thoroughly with your hands.
    Divide into 4 portions. May use now or freeze for later use.
