Salsa Verde (Italian Green Sauce) - cooking recipe
Ingredients

1 cup fresh parsley, leaves only
1/4 cup pine nuts
2 tablespoons capers
1 garlic clove
3 anchovy fillets
red wine vinegar, to taste
1/2 cup extra virgin olive oil
salt & pepper
1 cup basil leaves (optional)
1/2 cup mint leaf (optional)
1 tablespoon Dijon mustard (optional)
1/2 cup parmesan cheese (optional)
Preparation

Blend all the ingredients in a blender or with pestle and mortar.
Leaving it to stand for a while allows the flavors to develop.
Mix with pasta or place a dollop on meat or fish.
