Creole Haddock - cooking recipe
Ingredients

2 lbs fresh haddock fillets
1 1/2 cups fresh tomatoes, chopped
1/2 cup green pepper, chopped
1/3 cup lemon juice
1 tablespoon cooking oil
2 teaspoons salt
2 teaspoons dry onion flakes
1 teaspoon basil leaves, crushed
1/4 teaspoon pepper, coarse
1/8 teaspoon hot sauce
Preparation

Preheat oven to 500*.
Place fillets in baking dish.
Combine tomatoes, green peppers, lemon juice, oil, salt , onion flakes, basil leaves, pepper, and hot sauce.
Spoon tomato mixture over fillets.
Bake fillets for 5 -8 min or until fillets flake easily.
Place fillets on a warm platter.
Garnish with tomato and green pepper rings.
