Cod Over Lemon Basil Orzo - cooking recipe

Ingredients
    1 tablespoon olive oil
    2 garlic cloves, minced
    1/2 cup yellow bell pepper, finely chopped
    1 1/2 cups red and yellow tomatoes, chopped
    3/4 cup white wine
    1 teaspoon capers, drained
    2 cod fish fillets
    1 cup orzo pasta
    6 cups water
    1/3 cup fresh lemon juice
    1 lemon, zest of
    6 fresh basil leaves, chopped
    salt
    pepper
    1 cup orzo pasta
Preparation
    Bring 6 cups water, lemon juice and zest to a boil using a large saucepan.
    While the water is coming to a boil heat olive oil in a large skillet over medium heat.
    Add garlic and saute 2 minutes.
    Add tomatoes and peppers, cook 4 minutes.
    Add wine and simmer about 5 minutes.
    Add orzo to boiling water cook aprox 9 minutes.
    Sprinkle the cod fillets with salt and pepper.
    Add to the skillet and bring to a simmer. Cover the pan with a tight lid and simmer about 10 minutes or until fillets are cooked through.
    Drain orzo after 9 minutes and toss with basil.
    Serve fillets over the orzo and topped with sauce.
