Healthy Harvest Muffins - cooking recipe
Ingredients

1 1/2 cups brown sugar
1/2 cup unsweetened applesauce
2 eggs
1 cup pumpkin
1 3/4 cups flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons pumpkin pie spice
1/3 cup water
1/4 cup raisins
1 cup shredded carrot
Preparation

Combine sugar and applesauce.
Add eggs and pumpkin.
Sift together dry ingredients and add alternately to pumpkin mixture with water.
Fold in raisins and carrots.
Spoon into lined muffin tins and bake at 350 degrees for 30 minutes, or until a toothpick inserted into the middles comes out clean.
