Flat Rice (Poha) Veggie Pilaf - cooking recipe

Ingredients
    4 cups poha, thick
    1/2 cup cashew pieces
    1/2 cup bell pepper, any colors
    1 cup cilantro, chopped
    2 tablespoons gingerroot, grated
    1/4 teaspoon turmeric
    1/4 teaspoon hing
    2 teaspoons sugar
    6 -8 tablespoons oil
    salt
    1 large potato, cubed
    1/4 cup raisins (optional)
    1/2 cup frozen green pea
    4 tablespoons lemon juice
    1 tablespoon jalapeno, diced
    1/2 teaspoon mustard seeds
    1/2 teaspoon cumin seed
    1 tablespoon coriander powder
    3 curry leaves
    1 1/4 cups water
Preparation
    Wash and drain rice.
    Combine rice in bowl with 1/4 c water and soak 15 minutes.
    Heat oil in a wok.
    Add mustard seeds.
    When they crackle, add cashews, raisins, hing, curry leaves, and all dry spices.
    Stir to combine.
    Add all vegetables, ginger, jalapeno, and cumin seeds.
    Add 1 c water and cover.
    Cook over medium heat until potatoes are done.
    Add flat rice, cilantro, salt, sugar, and lemon juice.
    Stir and serve hot with any green chutney.
