Oj Oj (African Yam Fritters) - cooking recipe

Ingredients
    4 yams (sweetpotato or wateryam tuber)
    1 medium onion
    cilantro (hand full-chopped)
    1/2 cup flour
    2 eggs
    salt & freshly ground black pepper
    oil
Preparation
    Peel and grate yams, squeeze out any excess water; add egg, flour, onion and cilantro; season with salt and pepper.
    Heat about 1 \" of oil in skillet; Drop yam mixture by large spoonfuls into hot oil; cook 3-4 minute on each side or until golden brown.
