Ladolemono (A Simple Sauce For Fish) - cooking recipe

Ingredients
    1/2 cup extra virgin olive oil
    1/4 cup fresh lemon juice (only fresh!)
    1 generous teaspoon Dijon mustard (or similar mustard)
    1 generous teaspoon finely-minced fresh parsley (optional)
    1/2 teaspoon dried Mediterranean oregano
    salt and pepper, to taste
Preparation
    Whisk together all the ingredients in a small bowl until sauce is lightly emulsified. Serve over your favourite fish that has been simply-prepared.
