Dill Sweet Potato Salad - cooking recipe

Ingredients
    2 large japanese sweet potatoes
    1 large cucumber
    5 tablespoons flax seed oil (the flax oil gives it a pleasant, nutty flavor) or 5 tablespoons olive oil (the flax oil gives it a pleasant, nutty flavor)
    2/3 cup coconut vinegar (decrease amount if using white vinegar) or 2/3 cup other vinegar (decrease amount if using white vinegar)
    1/4 cup chopped fresh dill (or more)
    salt and black pepper
Preparation
    Cube and steam sweet potatoes 8-10 minutes, until easily pierced with a fork.
    White they cool a bit, dice the cucumber and combine with the rest of the ingredients.
    Add in cooled sweet potatoes and stir well.
    Taste for salt and pepper and chill or serve room temperature.
