Rotel Spicy Skillet Chicken - cooking recipe

Ingredients
    2 tablespoons olive oil
    4 boneless skinless chicken breast halves
    1 medium onion, chopped
    3 garlic cloves, minced
    2 cups sliced fresh mushrooms
    1 (10 ounce) can rotel diced tomatoes and green chilies (Original)
    1/4 cup shredded part-skim mozzarella cheese
Preparation
    In large skillet, cook chicken in hot oil until brown. Add onion and garlic, saute until tender, about 5 minutes.
    Add mushrooms and ROTEL tomatoes; reduce heat. Cover and simmer 25 minutes, stirring occasionally until meat is done.
    Sprinkle with cheese. Replace cover and heat until cheese melts.
    Serve over rice.
