Vegetarian Coconut Cashew Curry - cooking recipe

Ingredients
    1 large sweet potato
    1 red pepper, seeded and thinly sliced
    2 small potatoes, peeled and chopped (I used red)
    1/2 medium onion
    2 cups vegetable broth
    2 cups unsweetened coconut milk
    2 tablespoons yellow curry powder
    1 tablespoon red curry paste
    1 teaspoon cumin
    1 teaspoon salt (or to taste)
    1/2 teaspoon cayenne pepper (or to taste)
    1/2 cup roasted cashews
    2 cups cooked jasmine rice
    1 cup green beans
Preparation
    sautee potatoes with curry powder / paste in a large pan. Add remining ingredients.
    Simmer until potatoes are cooked through. enjoy over rice.
