Sausage, Spinach And Cheese Breakfast Squares - cooking recipe

Ingredients
    14 eggs, beaten
    1 (16 ounce) bag , chopped frozen spinach, defrosted
    1 lb sausage meat or 1 lb ham, cubed
    2 1/2 cups shredded cheese, of choice
    1 teaspoon salt
    1 teaspoon ground pepper
    1 cup onion, chopped
    1/2 cup baking mix or 1/2 cup flour
Preparation
    Spread the sausage out on a microwave-safe bowl and microwave until it's cooked. Drain it and crumble it and set aside.
    Beat the eggs with the baking mix (we use Carbquick) and salt and pepper.
    Drain the spinach and add to the eggs.
    Add the cheese.
    Add the sausage.
    Bake in large rectangular pan that's been well sprayed with non-stick spray (I use a 13x8\" pan) You could also bake these (for less time) in sprayed muffin tins.
    Bake 350 degrees for about 40 minutes or until the center is set. Cool and cut into squares.
