Brown Sugar Breakfast Sausage - cooking recipe

Ingredients
    2 lbs pork shoulder
    1 tablespoon ground sage
    1 teaspoon dried marjoram
    1 tablespoon dried thyme
    1/2 - 1 teaspoon red pepper flakes (depending on personal taste)
    1/2 teaspoon salt
    1/2 teaspoon fresh ground black pepper
    1 tablespoon brown sugar
    1 pinch ground cloves
Preparation
    Cut your pork into about 1 inch cubes and place in a large bowl.
    In a small bowl combine all of your spices, herbs, brown sugar, salt & pepper and mix well.
    Pour spice mixture over your cubed meat and mix well with your hands.
    Cover bowl and refrigerate for 4 hours or overnight to allow the flavors to meld.
    Using a meat grinder grind your seasoned pork cubes at your desired coarseness.
    Stuff into sausage casings.
