Honduran Pollo Con Salsa (Chicken In Sauce) - cooking recipe

Ingredients
    3 1/2 lbs frying chickens, whole
    1/4 cup cooking oil
    1/8 - 1/2 teaspoon hot chili powder
    1/4 cup ground sesame seeds
    3 whole cloves
    1 cinnamon stick
    1 teaspoon brown sugar
    1/4 teaspoon fenugreek seeds
    1/2 teaspoon salt
    1/4 teaspoon pepper
    2 cups boiling water
    2 tomatoes, chopped
    1 green pepper, chopped
    1 onion, chopped
Preparation
    Brown chicken in oil on all sides; remove from pot.
    Add chili powder, sesame seeds, cloves, cinnamon, brown sugar, fenugreek, and salt and pepper; brown in oil.
    Add remaining ingredients.
    Simmer until tender.
    Add chicken and cook until tender, turning occasionally.
    Add more water if necessary.
    NOTE: Peanuts can also be included in the sauce.
    Pork, instead of chicken, may be used.
