Diabetic Cheesecake - cooking recipe

Ingredients
    1/2 cup boiling water
    1 (2 g) package gelatin
    2/3 cup cottage cheese
    1/4 cup evaporated skim milk
    1 (2 g) package artificial sweetener
    2 tablespoons lemon juice
    1/2 cup crushed pineapple
    TOPPING
    1 slice bread
    1 (2 g) package artificial sweetener
    1/2 teaspoon coconut extract
Preparation
    Mix water and gelatin in blender.
    Add cottage cheese, milk, sweetener and lemon juice. Blend til smooth.
    Add crushed pineapple.
    Blend.
    Pour into 8 inch pan.
    TOPPING:
    Mix all ingredients in blender.
    Sprinkle over filling and refrigerate 24 hours.
