Chip'S Salad - cooking recipe

Ingredients
    Dressing
    1/2 cup olive oil
    1/4 cup red wine vinegar
    1 1/2 teaspoons oregano
    1 tablespoon lemon juice
    Salad
    1 head lettuce, chopped
    3 -4 roma tomatoes, quartered
    1/2 small red onion, sliced very thin
    8 -10 pepperoncini peppers
    3 -4 minced fresh garlic cloves
    2 eggs, hard boiled and chopped
    1 cup parmesan cheese or 1 cup romano cheese, freshy grated
    Variations
    1/2 lb hard salami, sliced and quartered
    1/2 lb prosciutto, sliced thin and chopped
    1/2 lb pepperoni, sliced and halved
Preparation
    Mix all salad ingredients above, except eggs and cheese, in bowl.
    Let sit, covered, for 30 min - 1 hour.
    Just before serving, add eggs, cheese (and meat if applicable).
    Toss with dressing.
