Creole Chicken With Long Grain Brown Rice - cooking recipe

Ingredients
    1 tablespoon olive oil
    2 chicken breasts, sliced up
    24 ounces chopped tomatoes
    1 cup chicken broth
    1 green pepper
    2 onions
    3 garlic cloves
    1 teaspoon cumin
    1 teaspoon coriander
    1 tablespoon chili powder
    1 teaspoon oregano
    2 teaspoons creole seasoning
    10 saffron threads
    2 cups long grain brown rice
    3 1/2 cups chicken broth
Preparation
    Saute onions, garlic, and green pepper.
    Add sliced up chicken.
    Add tomatoes.
    Add chicken broth and spices.
    Simmer until liquid is reduced.
    While simmering, prepare rice using a pressure cooker.
    Recommend 2 c rice to 3.5 cups chicken broth.
