Irish Sticky Carrots With Whiskey-Ginger Glaze - cooking recipe

Ingredients
    1 teaspoon brown sugar
    1/2 teaspoon black pepper
    2 teaspoons sea salt
    1/4 cup peanut oil
    3 tablespoons butter
    4 large carrots
    1/4 inch piece ginger
    2 tablespoons Irish whiskey
    1/2 cup chicken stock
Preparation
    Peel carrots and slice into 1/2 inch circles.
    peel ginger and cut into matchstick sized strips.
    Combine sugar, pepper, and salt.
    heat the oil and half of the butter in a large skillet.
    add the carrots and sprinkle with sugar mixture.
    cook 3 minutes.
    turn slices with tongs.
    when browned on both sides and starting to blacken at the edges transfer carrots to a plate.
    clean skillet with a paper towel.
    and ginger and cook 2 minutes.
    add to the carrots.
    add remaining butter, whiskey and stock bring to a boil and cook 3 minutes until syrupy.
    return carrots and ginger to skillet and mix well with syrup.
