Easy Sweet Potato Soup - cooking recipe

Ingredients
    2 medium sweet potatoes
    1 tablespoon vegetable oil
    1 onion (small finely chopped)
    2 garlic cloves, minced
    1 teaspoon ground ginger
    2 teaspoons mild curry paste
    4 cups chicken broth
Preparation
    Peel and cut sweet potatoes into 1'' cubes, set aside.
    In large saucepan, heat oil over medium heat.
    Add onion, garlic, ginger and curry paste.
    Cook, stirring occasionally for 3 minutes or until softened.
    Add sweet potatoes, stir for 1 min or until coated.
    Add broth and bring to boil.
    Reduce heat, cover and simmer 10 min or until potatoes are tender.
    Cool.
    Puree cooled soup in blender.
    Reheat and serve.
