Pickled Onions - cooking recipe

Ingredients
    1 large red onion, halved and thinly sliced
    1 teaspoon dried oregano
    1 bay leaf
    1/2 teaspoon salt
    1/2 cup cider vinegar
Preparation
    Place onion in a medium saucepan with enough cold water to cover. Bring to a boil over medium heat.
    When water begins to boil, cook 1 minute. Remove from heat and drain.
    Place onion in a medium bowl. Add remaining ingredients and just enough water to barely cover. Let stand at room temperature 3-4 hours.
    To use, drain well. Serve as garnish or condiment.
