Japanese-Style Guacamole - cooking recipe

Ingredients
    1/2 cup edamame, shelled and chopped
    2 tablespoons pickled ginger
    1/4 cup green onion, chopped
    1/4 cup tomatoes, chopped
    2 tablespoons cilantro, chopped
    1 tablespoon jalapeno pepper, seeded and minced
    1 tablespoon sesame oil
    2 tablespoons low sodium soy sauce
    2 tablespoons fresh lime juice
    2 avocados, chopped
    salt and black pepper
Preparation
    Combine the first 6 ingredients in a large mixing bowl, and toss well. Add sesame oil, soy sauce, and lime juice, toss gently. Add avocado, using a large fork or potato masher. Coarsely mash avocado to incorporate making sure to leave the guacamole chunky. Add salt and black pepper. Place in an air-tight container and refrigerate until ready to serve. Serve with celery, carrot sticks, broccoli, and asparagus.
