Spiced Corn Muffins - cooking recipe
Ingredients

1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1/8 cup sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon coriander
1 1/4 cups milk
2 eggs
2 tablespoons olive oil
1/2 cup cheddar cheese, shredded and gently packed
Preparation

Heat oven to 425\u00b0F Coat muffin pan with non stick spray.
Mix together the dry ingredients in a large bowl.
Mix together the wet ingredients, not including the cheese, in a small bowl.
Add the wet to the dry and mix until almost no dry spots remain. Add the cheese at this point and mix until everything has been moistened.
Fill 12 muffing cups 1/2 full and bake for about 15 minutes or until a toothpick inserted in the center of a muffin comes out clean.
