Scandinavian Rice Pudding - cooking recipe

Ingredients
    2 cups cooked rice
    3 eggs, beaten
    1/2 cup sugar
    1/4 teaspoon salt
    3 1/2 cups milk
    1/2 cup raisins
    1/2 teaspoon lemon juice
    1 tablespoon cinnamon
    1 teaspoon nutmeg
    1 tablespoon butter
Preparation
    Combine rice, eggs, sugar, salt, milk, raisins, and lemon.
    Spray a baking dish with cooking spray and pour in the rice mixture. Tap the dish on the counter to settle it.
    Sprinkle the top with the cinnamon and nutmeg and drop small pieces of the butter evenly across the pudding.
    Bake for 1 hour and 350\u00b0F May be served warm or cold.
