Apricot-Pecan Muffins - cooking recipe

Ingredients
    1/2 cup butter, room temperature
    1 cup sugar
    2 eggs
    2 teaspoons vanilla
    2 teaspoons baking powder
    1/4 teaspoon salt
    2 cups flour
    1/2 cup milk
    1 cup chopped pecans
    1 1/2 cups apricots, chopped
Preparation
    Cream together butter and sugar.
    Add vanilla.
    Beat in eggs, one at a time.
    Combine dry ingredients and add to creamed mixture alternately with milk.
    Stir in nuts & apricots.
    Spoon into paper lined or greased muffin pans.
    Bake at 375 for 25 minutes. I have used this recipe for mini-muffins, regular muffins and jumbo muffins.
