Elizabeth'S Chocolate Zucchini Cake - cooking recipe
Ingredients

6 ounces good quality semisweet chocolate
1/2 cup vegetable oil
1/2 cup butter
1 1/2 cups sugar
3 eggs
1 tablespoon vanilla
1/3 cup buttermilk
2 cups unbleached flour
1/3 cup Dutch-processed cocoa powder
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
3 cups grated zucchini
Preparation

Melt chocolate, oil and butter at low heat.
Mix together in seperate bowl sugar, eggs,vanilla and dairy choice.
In another bowl sift together flour, cocoa, soda, baking powder and salt.
Mix all ingredients alternating wet and dry.
Finally add zucchini.
Bake in greased and floured Bundt pan at 350 degrees F.
For 40-60 minutes or until straw comes out clean.
