Jumbo Pecan Date Oatmeal Cookies - cooking recipe
Ingredients

1 cup butter
3/4 cup sugar
3/4 cup packed brown sugar
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 large eggs
3 cups oats
2 cups pitted dates, chopped
1 cup pecans, chopped
Preparation

Beat butter and sugars at med. speed with electric mixer until light and fluffy. Reduce speed to low and add flour, baking soda, vanilla, salt , cinnamon and eggs. Mix just until blended, scraping bowl occasionally. With spoon, stir in oats, dates and pecans.
Drop cookie dough by level 1/4 cup 3 inches apart on ungreased cookie sheets.
Bake cookies for about 20 to 25 minutes in a 350\u00b0F preheated oven.
Remove from sheet and cool on wire rack.
