Fresh Peach Cobbler Roll - cooking recipe
Ingredients

1/2 cup butter
2 cups sugar (less if fruit is sweet)
2 cups water
1 1/2 cups pre-sifted self-rising flour
1/2 cup shortening
1/3 cup milk
1 teaspoon cinnamon
2 cups fresh peaches, finely chopped
Preparation

Melt butter in a 13 X 9 inch baking dish.
Heat sugar and water in medium saucepan until sugar is disolved.
Cut shortening into flour until mixture resembles cornmeal.
Add milk and stir with fork until dough leaves side of bowl.
Turn dough onto lightly floured surface or pastry cloth and knead only until smooth.
Roll dough out to form a large rectangle about 1/4 inch thick.
Sprinkle cinnamon over the peaches and spread the mixture evenly over the dough.
Roll dough up like a jelly roll.
Dampen the edge of the dough to seal.
Cut the roll into about 16 slices.
Place the slices on edge in the pan of melted butter.
Carefully pour sugar syrup around the rolls.
This will look like too much liquid, but the crust will absorb it.
Bake at 325 degrees for 35-40 minutes or until most of the juice has been absorbed.
