Mushroom Barley Soup With Herbs - cooking recipe

Ingredients
    2 cups finely chopped onions
    1 cup diced carrot
    1/2 cup finely chopped celery
    1 tablespoon vegetable oil
    16 ounces mushrooms, sliced
    1 teaspoon minced garlic
    1 teaspoon dried thyme
    1 teaspoon dried basil
    1 teaspoon dried tarragon
    1/2 teaspoon celery seed
    2 cups beef stock
    2 cups chicken stock
    2 cups water
    1/2 cup pearl barley
    salt and pepper
    3 tablespoons chopped parsley
Preparation
    Saute onions, carrot and celery in oil until browned, about 8 minutes.
    Stir in mushrooms, garlic and herbs. Saute 3 minutes.
    Stir in stocks, water and barley. Heat to boiling. Reduce heat and simmer, covered, until barley is tender, 45-60 minutes.
    Season to taste with salt and pepper. Stir in parsley.
