Dashi Stock - cooking recipe

Ingredients
    1 piece konbu (dried kelp)
    1 1/2 ounces bonito flakes
    7 cups water
Preparation
    Wipe konbu with damp cloth and put in pot with water. Just before water comes to a boil, remove kelp and discard. Take pot off the heat and sprinkle in bonito flakes. As soon as the bonito flakes start to sink, strain and serve. This can be kept refrigerated for 3 days.
