Cajun Ham And Potato Bake - cooking recipe

1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
2 medium potatoes, peeled and sliced
3/4 cup lean ham, diced
2 teaspoons chili powder
1/4 teaspoon cumin
1 onion, sliced
Preparation

Preheat oven to 350 degrees F.
Spray a 9-inch square baking dish with nonstick spray.
Set aside.
In a medium bowl, combine vinegar, mustard, chili powder, and cumin.
Add potatoes, onion and ham; toss to coat.
Transfer to the pan.
Bake, covered, for 35 minutes.
Uncover and bake 10 minutes longer, or until potatoes are tender.
