Sunrice Brown Rice And Mixed Bean Salad - cooking recipe

Ingredients
    2 cups brown rice, uncooked
    400 g canned beans, drained (four-bean mix)
    1 cup green beans, cooked
    1 Spanish onion, sliced
    1/2 bunch parsley, chopped
    250 g cherry tomatoes, halved
    4 tablespoons extra virgin olive oil
    2 tablespoons white wine vinegar
    1 teaspoon coarse grain mustard
    salt and pepper
Preparation
    Cook Brown Medium Grain Rice as per pack instructions. Allow to cool.
    2 Place all ingredients in to a large bowl and mix together gently.
    3 Season to taste with salt and pepper.
    4 Tip: This salad is great served at a BBQ or as a healthy lunch. Variation: Sprinkle with some crumbled fetta cheese.
