Blintzes For Passover - cooking recipe

Ingredients
    Batter
    3 eggs
    2/3 cup matzo meal
    1/2 teaspoon salt
    1 1/4 cups water
    Filling 1
    2 1/2 2 1/2 cups beef or 2 1/2 cups turkey
    2 eggs
    1 medium onion, diced
    1 tablespoon margarine
    1/2 teaspoon salt
    1 dash pepper
    Filling 2
    1/2 lb well-drained cottage cheese
    2 eggs
    3 tablespoons melted butter
    salt
Preparation
    For Batter:.
    Combine eggs, salt, and water. Add gradually to matzah cake meal, stirring hard to avoid lumps.
    Fry into thin pancakes on one side only.
    Place a rounded spoonful of filling onto each pancake.
    Fold envelope fashion -- one end, then both sides, then roll to close completely.
    Fry in oil.
    Note: you can make the blintzes ahead, then put them packed closely together in a baking dish, and reheat in a slow oven, and serve casserole style at the table.
