Cheat'S Chocolate Eclairs - cooking recipe

Ingredients
    250 ml double cream
    1 teaspoon vanilla
    1 tablespoon icing sugar, sifted
    12 sponge finger biscuits, halved lengthways
    125 g dark chocolate, melted
    1/4 teaspoon vegetable oil
Preparation
    Whisk cream, vanilla and icing sugar together in bowl until thick.
    Place the bases of biscuits on a wire rack.
    Spoon on to them the cream mixture.
    Top with remaining biscuits.
    Mix together the melted chocolate and oil.
    Spread this mixture over the tops of the biscuits.
    Serve within the hour or they will go soft.
