Mini Banana Chip Muffins - cooking recipe
Ingredients

1/2 cup butter, softened (1 stick)
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1 1/4 cups sliced ripe bananas (about 3 medium)
2 cups white whole grain wheat flour
1 1/4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup light sour cream
3/4 cup mini chocolate chip
Preparation

In a large mixing bowl, cream the butter and sugar until light and fluffy.
Add the eggs, one at a time, beating well after each addition.
Beat in vanilla.
Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream, stirring until just combined.
Stir in sliced bananas and chocolate chips.
Spoon into greased muffin top tins or mini muffin tins and bake at 350 degree oven for 15 minutes or until a toothpick inserted near the center comes out clean.
Cool for 5 minutes before removing from pan to a wire rack to cool completely.
