Skillet Chicken And Rice - cooking recipe

Ingredients
    2 lbs chicken pieces, skinned
    1 teaspoon olive oil
    2 carrots, peeled,sliced 1/2 inch
    1/2 cup onion, chopped
    1 teaspoon chicken bouillon granule
    2 cups water
    3 cups fresh mushrooms
    3/4 cup long-grain rice
    1 teaspoon poultry seasoning
    1/4 teaspoon salt
Preparation
    Brown chicken pieces, in oil, over medium heat in a 12-inch skillet with non stick coating, about 15 minutes.
    Remove and set aside.
    Drain fat from skillet, if necessary.
    Add mushrooms, carrots, rice, onion, bouillon, poultry seasoning, 2 cups water, and salt.
    Place chicken atop rice mixture.
    Simmer covered for 30 minutes on medium-low, or until chicken and rice are done.
    Serves 4.
