Easy Tamarind Eggplant (Aubergine) - cooking recipe

Ingredients
    1 eggplant, cubed
    1 onion, chopped
    3 roma tomatoes, chopped
    1 tablespoon garlic paste
    1 teaspoon ginger paste
    1 teaspoon tamarind paste
    1 teaspoon cooking oil, of your choice
Preparation
    Heat oil on medium/high heat.
    Add onions, cook until soft.
    Add tomatoes, ginger, garlic. Cook for 5 mins until soft.
    Add eggplant and tamarind. Stir.
    Cover and cook on low heat for 20 minutes, stirring occasionally.
