Spanish Rice And Sausage - cooking recipe

Ingredients
    1/2 cup chopped green pepper
    1/3 cup chopped celery
    1/4 cup chopped onion
    1 tablespoon canola oil
    1 lb fully cooked smoked sausage, sliced
    1 (10 ounce) can diced tomatoes and green chilies, undrained
    1 (6 7/8 ounce) package Spanish rice, and pasta mix (or homemade -- see below)
    1/4 cup sliced pimento stuffed olive
    1/8 teaspoon pepper
    3/4 cup rice
    1 teaspoon salt
    1 teaspoon minced onion
    1 tablespoon dried tomato powder (or add 1 can diced tomatoes when cooking rice in chicken broth)
    1/2 teaspoon chili powder
    Homemade Spanish Rice
    1/2 cup uncooked spaghetti
    3/4 cup rice
    1 teaspoon salt
    1 teaspoon minced onion
    1/2 teaspoon chili powder
    2 tablespoons butter
Preparation
    Saute the green pepper, celery, rice/spaghetti and onion in butter until the veggies are tender.
    Stir in the remaining ingredients. Cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed, stirring occasionally.
