Shiitake Mushroom Soup - cooking recipe

Ingredients
    2 cups shiitake mushrooms
    2 tablespoons fresh ginger, grated
    2 tablespoons olive oil
    1 cup chicken stock or 1 cup vegetable stock
    3 cups water
    1 (12 ounce) package soba noodles
    10 ounces spinach
    soy sauce
    lime juice
Preparation
    Saute mushrooms and ginger in olive oil until soft and fragrant.
    Add chicken stock and water and bring to a boil.
    Add Soba noodles and boil until soft.
    Lower heat and add spinach, cook until wilted.
    Finally add soy sauce and lime juice to taste.
