Cucumber Boat Salad - cooking recipe

Ingredients
    3 cucumbers, large
    1 cup ham, cubed
    1 cup American cheese, diced
    2 cups apples, red unpeeled diced
    1 tablespoon lemon juice
    3/4 cup salad dressing
    6 lettuce leaves
Preparation
    Cut unpeeled cucumbers in half lengthwise; remove seed portion.
    Scoop out pulp; leave firm shells; chop pulp coarsely.
    Combine ham, cheese, and apples that have been tossed in lemon juice and salad dressing.
    Add cucumbers to ham mixture when ready to serve; mix well.
    Fill cucumber shells.
    Serve on lettuce leaf.
