Mild Vegetarian Chili - cooking recipe
Ingredients

3 medium carrots, peeled and chopped
2 medium tomatoes, chopped
3/4 cup mushroom
2 medium zucchini, chopped
1 green bell pepper, chopped
1 sweet red pepper, chopped
1 medium onion, chopped
3 garlic cloves, minced
3 tablespoons olive oil
1 (15 ounce) can pinto beans
1 (15 ounce) can black beans
2 (750 ml) salsa (I use homemade)
1 teaspoon cumin
2 tablespoons dried oregano
2 tablespoons dried parsley
2 tablespoons chili powder
1 tablespoon sugar
salt & pepper
Preparation

In a large pot, saute all vegetables and garlic in the oil.
Drain and rinse the beans.
Add to pot along with remaining ingredients.
Bring to boil.
Once boiling, let simmer for 30 minutes.
