Scalloped Potatoes (No Dairy!) - cooking recipe
Ingredients

5 medium potatoes, peeled and sliced into 1/4-inch slices
1 large onion, minced
1 1/4 cups soymilk
2 tablespoons flour
1/2 teaspoon salt
fresh ground pepper
Preparation

Preheat oven to 375 degrees.
Lightly oil a shallow baking dish.
Place a layer of the potatoes on the bottom, overlapping slightly.
Sprinkle a layer of onions over the potatoes.
Alternate layers, ending with potatoes.
Combine flour, soymilk, salt and pepper, and whisk until smooth.
Pour over potatoes and onions.
Cover loosely with foil and bake 30 minutes.
Remove the foil and bake another 15 minutes, or until top is light brown and potatoes are tender.
