Pasta Of The Grape Harvest - cooking recipe

Ingredients
    5 lbs red seedless grapes, stem & wash
    1 1/2 cups dry red wine
    1 teaspoon anise seed, crushed
    1/8 teaspoon ground cinnamon
    2 whole cloves
    1 orange, zest of, shredded
    1 pinch salt
    1/4 teaspoon black pepper
    1 lb spaghetti or 1 lb linguine
    3/4 cup pistachio nut, shelled and chopped (optional)
    1/4 lb ricotta cheese (optional)
Preparation
    Chop grapes in a food processor.
    Pour into a large pan with the wine, spices, zest and salt and pepper.
    Bring to a boil and cook, uncovered, for 20 minutes or until reduced by 1/2 stirring often.
    Strain & Set aside.
    Cook pasta as directed on package until al dente and drain.
    Toss the hot pasta with the grape sauce.
    Plate into individual servings and top (if desired) with a dollop of ricotta and a sprinkling of nuts.
