Carrot, Mint And Pineapple Salad - cooking recipe

Ingredients
    1 lemon jelly
    2 tablespoons chopped mint
    2 cups grated carrots
    1 can crushed pineapple, drained
    2 spring onions
    salt and pepper
Preparation
    Make up the jelly with one cup of boiling water.
    Add remaining ingredients.
    Double the recipe if necessary.
    Very refreshing.
