3/4 cup fresh cilantro
1/3 cup Cotija cheese
1/3 cup extra virgin olive oil
1/3 cup water
2 jalapenos, stemmed, seeded, and diced
1/2 teaspoon garlic, minced
1/2 teaspoon red wine vinegar
1/2 teaspoon kosher salt
Preparation

Place cilantro, cojita cheese, olive oil, water, jalapenos, garlic, vinegar, and salt in a blender and puree until smooth.
Serve with roasted chicken.
