Pineapple Cake With Cream Cheese Icing - cooking recipe

2 eggs
1 1/2 cups sugar
2 cups all-purpose flour
1 (1 lb) can crushed pineapple in juice, undrained
1/2 cup chopped walnuts
2 teaspoons baking soda
1 tablespoon vanilla extract
Icing
2 cups icing sugar
8 ounces cream cheese, room temperature
1/4 cup butter, room temperature
1 tablespoon fresh lemon juice
1 teaspoon vanilla
Preparation

Preheat oven to 350 degrees F.
Lightly butter a 13 x 9 inch pyrex baking dish.
Beat eggs in a large bowl until light and fluffy.
Add sugar and continue beating until thick and light-coloured.
Stir in flour, pineapple (with juice), walnuts, baking soda and vanilla, and mix thoroughly.
Pour into prepared pan.
Bake 25-30 minutes, or until a tester comes out clean.
Let cake cool and ice.
For icing: Combine icing sugar, cream cheese, butter, lemon juice and vanilla and mix until fluffy.
