Weight Watchers Calavacitas (Mexican Succotash) 1 Point Per Cup - cooking recipe

Ingredients
    1 tablespoon vegetable oil
    1 cup corn (fresh or frozen)
    4 zucchini
    1 large tomatoes
    1 teaspoon oregano
    1/4 teaspoon cumin
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1/2 teaspoon garlic powder
Preparation
    In large fry pan heat oil.
    Add corn and cook until it browns a little. The carmelizing of the corn makes a difference in the taste.
    Quarter zucchini lengthwise and chop into small pieces.
    Chop tomato in small pieces.
    Once corn is nicely browned, add zucchini, tomato and spices.
    Cover with lid, reduce heat, and cook just until zucchini begins to become tender.
