Spanakorizo - cooking recipe

Ingredients
    1 onion, peeled, diced
    3 bunches spinach, washed 3 times
    2 tablespoons olive oil
    1 1/2 cups rice
    1 tablespoon tomato paste
    3 cups water, boiling
    1 chicken stock cube
    salt & pepper
Preparation
    Chop spinach roughly.
    Heat oil and saute onion for 10 minutes Add rice and spinach and tomato paste. Saute 5 minutes.
    Add water and stock cube and seasoning, mix well.
    Bring to boil and turn down heat and cook for 20mins or until rice is soft.
    Serve.
