Amish Potato Salad - cooking recipe

Ingredients
    Salad
    6 medium white potatoes
    1 small onion, finely chopped
    1 cup celery, chopped
    1 cup carrot, chopped (or shredded)
    1 teaspoon celery seed
    2 hard-boiled eggs
    Dressing
    2 eggs, beaten
    1/2 cup white sugar
    1 teaspoon cornstarch
    1/4 cup apple cider vinegar
    1/2 cup milk
    1 teaspoon yellow mustard
    3 tablespoons butter
    1 cup mayonnaise
Preparation
    Cut the potatoes into big chucks and boil until tender with a fork. Drain and set aside.
    In a large sauce pan over low heat whisk together the ingredients for the dressing. Continue untill thickens and chill for about 2 hours.
    In a large mixing bowl or container toss together the salad ingreidents and then carefully mix in the chilled dressing. Serve chilled.
